Rich Vegan Ragu

Vegan Ragu

hearty & full of flavour

Ingredients

1 red onion, finely sliced

1 carrot, finely chopped

1 celery stick, finely chopped

1 tsp dried parsley

1 tsp dried basil

180ml vegan red wine

4 cloves of garlic

1 aubergine, chopped into small chunks

250g cooked lentils

2 bay leaves

2 sprigs of thyme

2 tbsp tomato paste

500g passata

1 tsp balsamic vinegar

600ml vegan broth

150g shitaki mushrooms, roughly chopped

Handful of parsley

Salt and black pepper to taste
