Caribbean Salt Fish No Fish!

Caribbean insipred Salt Fish without the fish! I can't believe how much this recipe resembles Salt Fish. This is one of my favourite dishes packed with so much fresh flavour. A must have with some of my homemade Roti or Rice and Peas.

Cook Time: 10 mins
Feeds: 4 portions


820g heat of palms (2 cans)

2 spring onions

1 yellow onion

2 medium tomatoes

4 gloves garlic

1 red pepper

1 orange pepper

1 tbsp tamari

2 tbsp nori flakes

1 tsp fresh thyme

juice of lemon

pink salt and pepper

handful of fresh parsley

vegetable oil or water for cooking


1. Chop or pulse the heart of palm in a food processor until you get the right consistency. I prefer to chop to give me more control.

2. Chop the peppers and green onion and finely slice the yellow onion.

3. Add the peppers and both onions in a pan and saute for 5 minutes until lightly cooked.

4. Add the remaining ingredients minus the parsley to the pan, mix well and cook for another 5 minutes. Turn off the heat then garnish with lots of fresh parsley.

My favourite way to eat this is with roti and sweet plantain!
