Vegan Sundried Tomato Pesto

Incredibly delicious sundried tomato pesto recipe! So quick and easy to make and really versatile. Make a big batch and spread it throughout the week into different recipes.

1/4 cup of roasted ground almonds

1/4 cup of nutritional yeast

3 cloves garlic

240g sundried tomatoes

1 tbsp balsamic vinegar

30g of basil

4 tbsp quality olive oil

salt and pepper to taste


1. Using a heavy skillet heat the almonds over medium heat for 2 - 3 minutes until they begin to brown and give off a rich and tasty fragrance.  Toss regularly as they can burn very quickly so you'll need to keep a close eye on them throughout. 

2. Remove the almonds from the pan to cool, then add them to a food process to blitz into little pieces. 

3. To a food processor add all ingredients and pulse until you reach desired consistency.

tip: if your sundried tomatoes are very very stiff, you can soften them by leaving them to sit in a bowl of warm water for 15 minutes before making the pesto.
