1 fresh red chilli, sliced (1/2 red chilli for low heat)
2 spring onions, sliced
200g mushrooms, sliced
1 red pepper, sliced
Handful of tenderstem broccoli
Handful of green beans
Handful of fresh coriander
2 tbsp maple syrup
3 tbsp soy sauce/tamari
Salt and black pepper
2 fresh limes
1/2 cup quinoa + 1 cup of water
Rinse quinoa under cold water. Combine water and quinoa in a pot on a low heat. Bring to a boil, place lid on top and reduce to simmer for 10 minutes until all water has absorbed.
Stir fry onions for 5 minutes, then add in mushrooms and stir fry until brown. Then add ginger, garlic, spring onions, red pepper, tender stem, green beans. Mix to combine. Add maple syrup, soy sauce and mix to combine. Add Wholewheat noodles and quinoa and combine.
Serve with fresh coriander, red chillies and spring onions.
