Vegan Shepards Pie



1 red onion, diced

2 carrots, diced

1 celery, diced

2 bay leaves

1/2 tsp sweet smoked paprika

180ml vegan red wine

1/2 tsp dried rosemary

1 tsp dried thyme

1 tsp browning (optional gives flavour and depth of colour)

1 tsp vegan Worcester sauce

250g mushrooms, chopped

400g lentils, cooked 

200g mixed grains (can be a mix of quinoa, wheat gem, couscous, or soy protein, beans, barley, bulgar wheat, vegan mince ect)

2 tbsp miso paste

400g chopped tomatoes

300ml vegan vegetable stock

2 tbsp extra virgin olive oil

nutritional yeast

salt and black pepper to taste

handful of fresh parsley
