Easy vegan curry

great with naan bread and a fresh salad


4cm ginger

6 garlic cloves

6-8 large tomatoes

1½ tsp garam masala

1 tsp ground cumin

1 tbsp ground coriander

1 tsp turmeric

1/2 or 1 tsp chilli powder

1 tsp paprika

Salt and black pepper

1 tsp mustard seeds

1 onion

1 large sweet potato

400g black eyed peas

1 tbsp lemon juice, or to taste

Large handful of fresh coriander

*add 60ml of water if the curry needs more liquid, continue to add bit by bit as this depends on how juicy the fresh tomatoes are.
