quick & easy week day meal

Quick and easy weekday meal inspired by Thai Basil Beef but a vegan friendly version! This also goes so well with butter lettuce, or just as a salad without rice!

ingredients

250g vegan mince

5 cloves of garlic

1-4 chillies

2 lemon grass stalks

Handful of fresh thai basil

2 tbsp soy sauce

1 tbsp dark soy sauce

1-2 tbsp water

1 tbsp rice vinegar

1 tbsp maple syrup

Garnish with carrots, fresh coriander, spring onions, roasted peanuts

Dressing:

1 small garlic clove 1/2 tsp chilli flakes 4 tbsp light soy sauce 2 tbsp rice vinegar 2 tsp sesame oil 1 tbsp maple syrup
