Chickpea & Butternut Squash Coconut Curry

also great blended into a soup!

Warming butternut squash chickpea curry with coconut milk, perfect in autumn months. Add sweet potato to make it even heartier and even a spoon of peanut butter! You can also blend this up into a soup once cooked.

Ingredients

1 onion

thumb of ginger

5 cloves of garlic

1 tsp ground coriander

1 tsp ground cumin

2 tbsp garam masala

400g tin tomatoes (or fresh)

400g tin cooked chickpeas

1 stock cube

200ml coconut cream

Salt and black pepper to taste

Fresh coriander

Fresh red chillies

You can also blend this all up and turn it into a soup once cooked!
